6 Low-Carb Snacks to pack in your work lunch this week

Try these simple and affordable desk-ready munchies for work this week. My clients have asked for ideas that are easy to put together with a busy evening schedule and here are a few of my favorites!

  1. Nut butters – these are essential to have around if you are cutting back on carbs. Try pairing Almond, Cashew, or Pecan butter with traditional full-fat plain yogurt – you can even add some dark chocolate low-sugar chocolate chips.
  2. Hard-boiled eggs – While you are getting your items ready for work at night, set a pan of cool water on to boil with 4-6 fresh eggs in the pan. Add a pinch of salt and a splash of vinegar to ease peeling and increase the flavor. Bring the water up to a boil and turn off the heat. Let the pan sit for 10 minutes. Set the pan under cool running water after cooking, Peel and slice only one or two before placing in your reusable snack box for work. Make sure you include an ice pack or frozen water bottle to keep the eggs cool. Hard boiled eggs are full of protein (average 5-6.5 grams) and are considered one of the best sources of nutrients for those of us who consume eggs.
  3. Avocado & Cheese Lettuce Wraps – Mash half an avocado with sea salt, pepper, lemon & olive oil. Place the avocado, some of your favorite shredded cheese and some hot sauce, if you’d like, on top of a big leaf of lettuce. Roll up the wrap and secure it with a toothpick. You can also try folding it like an envelope if your lettuce is being unruly and uncooperative – hey, it happens.
  4. Kale chips and Guacamole – enough said. Here’s a shoutout to my favorite Kale chips – they come in several flavors and you’ll swear you’re not really eating Kale. I promise. Try Rhythm Mango-Habanero Kale Chips – you can grab them at Target or Amazon.
  5. Cottage Cheese with Berries – Grandma was never wrong with this one. Make sure you find Organic – or at least Full-Fat Cottage Cheese, the low-fat one is just not as good (let’s be honest, it’s kinda gross) and has a tangy, fake aftertaste.
  6. Cinnamon, Ginger, and Turmeric Toasted Pumpkin Seeds – Toss bulk-bought pumpkin seeds with avocado or olive oil, cinnamon, ginger, and turmeric, a little sea salt – and POW! It’s a flavor-explosion for your mid-day TPS-Report drudgery.
