Monica grew up on a rural Midwest farm surrounded by horses, cows, chickens, and nature. When she wasn’t helping with the farm chores, she spent her summer days biking and her winters ice skating, sledding, and baking cakes for her large, blended family.
Being outdoors was a large part of her childhood and she was an active Girl Scout exploring the wilderness on horseback and backpacking as a young girl. She jumped at the chance to relocate to the Colorado Rockies in her early twenties and has called the mountains home for over 30 years.
Monica spent many summers in the Colorado, Arizona, and Utah backcountry camping, backpacking, snowboarding, hiking, rafting, fishing, canoeing, and preparing outdoor cooking feasts for her friends, family, and outdoor adventure groups.
At 41, as a single mom, she decided to attend culinary school, finishing after three intensive years, and thousands of professional cooking hours later, with a degree in Culinary Arts and Sustainable Cuisine Operations. Her training included Agroecology and greenhouse work, understanding permaculture and local foodsheds, gardening, and farmers’ markets. Monica is still a working professional private chef, even though slightly retired!, and has worked with many talented culinary professionals in progressive restaurants and hotels in the Vail Valley. She has cooked for clients from Aspen to Houston, international guests, musicians, and celebrities. She brings a deep love for approachable cuisine that is healthy and affordable.
Monica found her passion at 50 and is now a Nationally Board-Qualified Integrative Health and Wellness Coach. She is trained in Functional Nutrition and Digestive Wellness, Mindfulness Meditation, Lifestyle Medicine, Stress and Anxiety Management, Habit Formation, and Positive Psychology. She is trained in Motivational Interviewing through PESI Healthcare.
